Don’t Tell Your Boyfriend It’s Vegan Bread

Boys don’t like to be healthy.  Actually, that’s not true.  Boys don’t like to admit they like to be healthy.  They shirk at anything that uses the words whole wheat, light, diet, or GOD FORBID….vegan.  Men like meat.  Men like full fat things that are bad for their hearts.  They publicly proclaim their love for these things.  But secretly, deep down, I think boys also like healthy things.  They’d never admit it.  But this bread is the best of both worlds.  It’s got bananas and peanut butter.  Both good things.  It also happens to be made without any animal products (ahem…vegan!) and uses whole wheat flour and ground flaxseeds.  “Ground flaxseeds!!!” you say?  Yes, ground flaxseeds.  Combined with the whole wheat flour, they give this bread a lovely nuttiness AND fiber and omega-3s.  Nothing wrong with that!

So start browning those bananas.  But hide the flaxseeds in the back of your pantry behind the diet coke.  Certainly your boyfriend won’t look there.

Ingredients:

1 1/2 cup mashed bananas (I used four small organic bananas– organic! Look at me being fancy!)

1/2 cup brown sugar

1/3 cup creamy peanut butter

1/3 cup vegetable oil

2 teaspoons vanilla extract

2 cups white whole wheat flour

1/4 cup ground flaxseeds (make sure you use ground ones, they are better for you)

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/8 teaspoon all spice

raw sugar for topping

Preheat oven to 350 degrees.  Grease and flour a loaf pan.  Combined first five ingredients in a stand mixer.  Mix on low until combined.  Add flour gradually as mixer churns.  When flour is combined add flaxseeds and spices.  Pour batter into loaf pan and sprinkle generously with raw sugar.  Bake for 55 minutes or until a knife insert into middle comes out clean.  Allow to cool in pan on a cooling rack for 15 minutes before removing.  Allow to cool completely before serving.
