Easy Chocolate Butterscotch Blondies

Yea…it’s a Friday.  So what?  Why do I need to go out and throw down cash at bars and flirt with boys when I’ve got this stud hanging out ready to snuggle on the couch with me while watching Sex and the City.

See?  Now you understand.

I wanted to bake tonight.  Not unusual for a Friday night.  I work on Saturdays at a local brewery, and I like to bring my coworkers in something delicious to make their day brighter.  I’m just that sweet.

The problem was… I haven’t been to the grocery store in a while.  Like…. a month.  I know I know.  It’s pathetic.  But living in a city with no car makes regular trips to the market tough, and my little neighborhood markets barely have anything.  So, as you can imagine, supplies are low.  I needed to find something simple, with few ingredients.  I mean come on – what the heck can you possibly make with ONE egg.  Well, I opened up my fridge and my cabinets and found just the right ingredients to make these.

Butterscotch Chocolate Blondies

1 stick butter, melted

1 cup brown sugar

1 egg

1 tsp vanilla extract

1 cup flour

1/2 cup butterscotch chips

1/2 cup chocolate chips

Preheat your oven to 350 and spray an 8 x 8 inch baking dish with non stick spray.  Melt butter in a microwavable glass bowl.  Add brown sugar and whisk until smooth.  Add egg and whisk until incorporated.  Add vanilla and flour.  Once the batter is smooth, add the butterscotch and chocolate chips.  Pour the batter into the baking dish and spread until even.  Bake for about 20 minutes, or until edges begin to separate from pan and become golden brown.  Check that the center is cooked by inserting a toothpick.  If the toothpick comes out clean, they are done.

If you can manage, allow the dish to cool over a wire rack.  Cut into squares and serve to your favorite people.
